Last weekend it was soggy, wet and gross. It pretty much rained non-stop all weekend long. Being couped up in the house, I decided to make some cookies on the condition that they be healthy.
These are the only ingredients – simple and healthy.
The cookies were easy to make except for grating of the apples. It took a bit of grunt work and wasn’t as quick an activity as I thought it would be. The recipe also requires you to use a sieve to get rid of the liquid from the grated apples. It took me a minute to realize that what I was draining was actually pure, fresh apple juice! So I quickly grabbed a glass to collect the goodness. Drinking that juice felt like a reward for my labours.
Back to the cookies. After the apples were ready, it was clear sailing. I just had to mix everything together and lay it out on a baking pan.
The only thing left to do was enjoy. I may have burnt them a little bit but they were still so so good!

We finally made it out of the parking garage and into the large common area, still under construction. Fits of laughter started…

Finally we made it into the actual condo unit and quenched our thirst with some bubbly. I think it’s safe to say that we really deserved it.
Someone is overly excited for the champs.
That cork popped like no other. It was quite impressive!
Then it was time for some food. But first, someone felt it necessary to change for the occasion.

Took me a second to realize what was really going on…
I’ve been spinning a lot lately. I’ve worked it into my schedule to attend spin class at least once a week, sometimes twice. Last night’s spin class was pretty amazing. I was on point! I pushed myself hard. I got into the music and climbed all the hills and raced all the flat roads. It was great.
These guys are not sweating enough!
And then this song came on and I emptied the tank until fatigue!
We cooled down soon afterwards and when I put my leg up on the handle bars to stretch, a leg SPASM began. Oooh it was so painful! I paused for a moment trying not to panic. I even thought I would just continue stretching but then I realized how insane that would be and quickly dropped my leg like a ton of bricks. I’m sure it had something to do with lactic acid build up or something. Crazy way to end an intense workout. Hopefully next time (i.e.: tomorrow), I don’t end up with the same nasty surprise.

I ended up having no plans tonight. I’m also unmotivated to do anything but watch TV, veg and surf the net.
I’m such an exciting and interesting person right now.
The rest of the night I’m going to continue watching this made for TV movie that’s pretending to take place in Australia but was clearly filmed in Toronto and later, continue reading the Hunger Games. It’s a fantastic book so far and I want to finish it before the movie comes out!
Not my immune system!
It must have taken a vacation. A long, extended one.
During the first week of January I got knocked down with some cold/flu combo. I only took a day off work thinking it would be like my other colds – bad for two days but totally out of my system in about six. Well this cold only started to lay off after 2 weeks. I thought it was normal though because I heard about this bug going around that liked to linger. During week 3, however, I developed this annoying cough, which I did not have before. No other systems, just a cough. Towards the end of week 3, I started waking up with a sore/dry throat. Now it’s week 4 and my cough has turned into a serious deep, chesty cough. And now today, I woke up with a headache. I thought it was because I enjoyed some wine last night but the headache lasted all day and by the afternoon I felt awful and just needed to pass out. Now I have a bit of a fever and have resorted to cold meds again. Guess it’s time to see the doctor again. Hopefully he can give me something to kill this bug! More than anything else, I’m just seriously annoyed.
So where was I ?
Right so last month this happened:
As I mentioned last post, I went to Asia. It was such an amazing trip. I’ve never been before and it opened my eyes up to a lot of new things. The food was yummy and interesting. Stinky Tofu, for instance, is not something I like. Taiwanese sausage, however, is super yummy. There was also a bit of culture shock. I also never thought I would be able to shop so much! My friend and I ended up buying an extra suitcase to take home and there was a last minute scramble when I found out my own suitcase was overweight at the airport. The highlight of the trip was being a bridesmaid in one of my best friend’s wedding in Taipei. We had such a fun time from trying on our dresses at the dress shop to getting our nails and hair done. The bride was beautiful and the wedding was super fancy and just perfect. I will definitely be returning to Asia soon.
Back to reality and back to winter! Brr. Things are really starting to cool down here and get snowy. For lunch today, I thought I would try something different and get back in the kitchen. I knew I needed to get some veggies in my diet so I spiced things up a bit with this recipe.
It tasted great! I added a piece of roast beef to it and yum yum yum, lunch was complete:
