Paleo Balls

Friday night the boyfriend and I made the most yummy snack/dessert, comprised of healthy ingredients. They are called Paleo Balls and boyfriend got the recipe from a friend who is following the Paleo diet. Don’t ask me what it’s all about. All I know is that it’s a kind of back to basics/cave man/hunter-gatherer kind of diet. If you know more or are following this diet, please feel free to comment about it.

Anyway, these are delicious. They do not disappoint and are dead easy to make!

Paleo Balls

1 cup almond meal (I could only find almond flour: finely ground almonds)
1 cup shredded coconut
1/2 cup honey
3 tbsp cocoa
Goji berries or dates (I used a handful of Goji berries)

Mix together in bowl, roll into balls, bake at 300 for 10-15 min
Note: We made around 15-16 balls from the recipe.

Hope you’re not afraid to get your hands dirty. No sense washing it off.
It definitely made for a great pre-snack snack! ha.

We also made another Paleo recipe called “Foccacio bread”. I’m not sure why it’s called this because it tastes nothing like Focaccia bread. I would describe it more as flaxmeal bread. We had pita bread on standby just in case the recipe didn’t work out. Surprisingly it tasted pretty good with the mini burgers we made.

Paleo “Focaccia” bread

2/3 cup flaxmeal
1/3 cup almond meal (ground almonds)
1 1/2 tsp baking powder (not paleo but optional)
3 tsp. olive oil
2 eggs

Mix in a bowl, spread out evenly on baking tray and bake at 350 for 15-20 min or until crusted.  Note: Double the recipe to fit a normal baking pan.

The bread was a little crumbly but otherwise tasty and held up as “buns” for our burgers just fine. The bread is also quite filling and I’m sure you could put all kinds of stuff on it like cheese or jam. They would be great as appetizers in this way!

    almond meal is the same as almond flour/ground almonds🙂 i made some cupcakes using it for mothers’ day and they were yummy but took some getting used to.
